Impressive vegetarian dinner recipes?

So I need to cook dinner for the boyfriend’s parents. I only cook vegetarian (so that means a lot of italian) but the mother will not eat anything with tomatoes or tomato sauce in it. Also, I am not an experienced cook so I can’t flambe stuff or do other difficult cooking things. Any super impressive (yet easy) vegetarian dinner ideas?

    Yup.

    You can simply do a fettucini alfredo. No chicken/shrimp required. Plus it’s not spaghetti:

    12 ounces fettuccini
    1/2 cup part-skim ricotta cheese
    1/2 cup plain low-fat yogurt
    1/2 cup grated Pecorino Romano cheese
    1 tablespoon unsalted butter, melted
    Fresh black pepper
    Directions
    Cook the noodles according to package directions, omitting the salt. Drain well and return to the cooking pot.

    In a food processor or blender, combine ricotta cheese, yogurt, Romano cheese, and butter. Add the cheese mixture to the cooked fettuccini and toss to coat. Add fresh ground black pepper. Serve warm and sprinkle with remaining Romano and more ground pepper.

    Serve with a caesar salad. Simply go to the store, they should have a kit to make caesar salad.

    Garlic bread is also an option as well.

    For desert, do something fruity and refreshing, like rasberry or strawberry ice cream with whipped cream and almonds on top.

    Soyrizo tacos.
    So easynessess. Velly impressing!
    Just cooking the soyrizo, puttting in taco shell or rolling into flour tortilla. Bake til crispiness. Top with lettuces, sour creams , onion, acavodo, soy cheezes.
    Also it make wonderfulness nachoes. You try!!!

    Here are some ideas you might consider:

    Chopped baby lettuce salad with ripe pears, gorgonzola, candied walnuts and champagne vinagrette
    Grilled Polenta with 4 cheese sauce
    Fresh zuchinni sauteed with Italian herbs, garlic, and olive oil

    Baked Macaroni and Cheese with 4 Cheeses
    Fresh green beans with lemon and garlic
    Stewed winter fruits with creme fraiche

    Potato Leek Soup
    Warm Potato Rosemary Bread
    Cheese Platter with smoked gouda, mushroom brie, cambozola, fontina
    Baby lettuce salad with radishes, kalamata olives, and vinagrette

    Get a pressure cooker, and learn to cook dahl (beans), and some rice.
    With a pressure cooker, it is very fast and easy.
