Quick and Easy Dinner Recipes

Barbara Pena asked:

Sometimes getting dinner on the table seems like a daunting task, but with a little preplanning, it can be quick and easy and even save you money. These quick and easy dinner recipes make getting dinner on the table faster than ordering take-out!

This first recipe is great for the Mexican food lover. The soup and sour cream combine with the taco sauce and chilies to create a creamy but flavor filled sauce. The chips add a simple but nice contrast. You can control the spiciness of this dish by using either a hot or mild taco sauce.

Chicken n’ Chips

1 can cream of chicken soup

8 ounces sour cream

2 tablespoons taco sauce

1/4 cup chopped green chilies

3 cups cubed chicken

12 slices American cheese slices

4 cups broken tortilla chips

Stir together the soup, sour cream, taco sauce and chopped chilies.

In a shallow 2 qt baking dish layer 1/2 of the chicken, soup mixture, cheese and tortilla chips. Repeat Layers.

Bake uncovered at 350 degrees for 25-30 minutes or until bubbly.

Serve the Chicken n’ Chips with Spanish rice, refried beans and a fresh, crisp salad.

The second recipe is an easy spin on the traditional comfort food of Beef Stroganoff. The aroma of the garlic cooking is fabulous. The flavors meld together very nicely.

Quick and Easy Beef Stroganoff

1 pound beef round steaks - cubed

1 onion chopped

1 4-ounce can mushrooms do not drain

2 teaspoons minced garlic

3 teaspoons beef bouillon

3 cups water

4 cups medium egg noodles

1 cup sour cream

Spray a large pot with cooking spray. Cook beef, onions, mushrooms and garlic over medium high heat. Stir occasionally until meat is cooked through.

Add water, beef bouillon, egg noodles and sour cream to the meat mixture. Turn the heat up to high and bring to a boil.

Once boiling, turn heat down to low (do not cover). Cook on low for 5-7 minutes until pasta is desired doneness, stirring occasionally.

Remove from heat. Let sit 4-5 minutes before serving. Sauce will thicken as it stands.

To round out this meal, serve with fresh rolls that are warmed in the oven and canned or frozen peas.

This third recipe is a stick to your ribs kind of meal. The stuffing gives this recipe a nice change of pace from your tradition meat and potatoes type dinner. This recipe is also very budget friendly.

Hearty Hamburger Casserole

1 pound ground beef

1 19-ounce can chunky vegetable soup

1 6-ounce package instant stuffing mix

1/2 cup shredded Cheddar cheese

Brown beef in a large skillet until no longer pink. Drain any fat and stir in soup. Set aside.

Prepare stuffing mix according to package directions while beef is cooking.

Spray a 2 qt baking dish with cooking spray. Spoon half of the stuffing into baking dish. Layer with beef mixture, cheese and remaining stuffing.

Bake, uncovered, at 350 degrees for 30-35 minutes or until heated through.

This is pretty close to a one-dish meal, but to make it complete, serve with fresh, warmed rolls and a side salad.

These quick and easy dinner recipes should provide some variety to your dinner repertoire and at the same time get dinner on the table fast!

Easy Dinner Ideas for the Whole Family

Wednesday, October 29th, 2008
Jude Wright asked:

Providing your family with easy dinner ideas each night is never easy. They need to include foods which the family loves an also provide the right nutrition for health. They need to be made quickly especially on the nights you work late. It must include healthy options and, above all else, taste good. The recipes listed here will give you what you are looking for in easy dinner ideas the entire family will love.

The Easy dinner ideas listed here would not be served art a gourmet restaurant but, they will give you and your family a nutritious option each night. They are simple to prepare for and do not require many ingredients. You will also not need to take much time to plan for it. You might even look forward to coming home each night just so you can prepare them.

The first of the easy dinner ideas is an old classic, barbecue chicken. It will take less than an hour to make and can feed a large family cheaply. The trick to cooking barbecue chicken is to make sure the outside does not burn while the inside is cooking through. To make sure this is accomplished, put the barbecue coating on after the chicken is cooked thoroughly and let it heat until warm.

To prepare this, preheat the oven to 300 degrees. While you are waiting for the oven to heat, take out a baking dish and add about a teaspoon of oil. You can use olive oil for a healthier option. Add your chicken pieces to the pan and coat with salt and pepper. Put the chicken in the heated oven and cook until white inside and heated to 180 degrees by meat thermometer. Mix one 16 ounce can of orange soda and 16 ounces of barbecue sauce together and coat chicken. Put back into the oven for about ten to fifteen minutes. Remove and enjoy. Add a Side salad and a baked potato or potato salad made with low fat mayonnaise and you have one of the most perfect easy dinner ideas.

One of the kids favorites as well as good eating for adults is tater tot casserole. It is super simple to create and only takes less than an hour from start to finish. It is great because it only requires the use of two pans. A pound or two of ground met such as beef, turkey, chicken, or pork needs to be cooked and browned. While this is cooking, preheat the oven to 350 degrees. Take out a large baking dish and begin to cover the bottom with frozen tater tots. Drain the cooked ground meat and begin to add a layer over the tater tots.

If you like onions, you can also cut these and layer them on top of the meat. Add a layer of shredded cheese of your choice. Cover all this with cream of mushroom or cream of chicken soup. Continue layering the ingredients until you reach the top. Add a final layer of cheese and cover with foil. Put into the oven until the casserole is heated through. Take off the foil and let sit in the oven for a minute to make it brown. Serve each person and enjoy. It goes great with a fresh salad and a nice large glass of milk.

Everyone Needs a Good Collection of Healthy Dinner Recipes

Saturday, September 13th, 2008
Preeti Chauhan asked:

Everyone needs a collection of healthy dinner recipes, dishes you can rustle up in minutes that everyone likes, and which aren’t laden with fat or processed ingredients. In the United States, it’s well known that many of us are both overweight and lacking in the nutrients contained in a healthy diet. Some people gain a lot of weight by frequent stops at the fast food places, just because it’s more convenient and we don’t have any cleanup or we’re simply short on time. For more details go to: www.apples-recipes.com You can serve 20-30 minutes from beginning of your cooking if you well planned and foresee before cooking and from these you can make a balanced, nutritious and healthy dinner recipes. You’ll win all the way around, enjoying better health, saving money and maybe losing a few unwanted pounds. Did your mom tell you, if how many times you to eat your vegetables? When you think of a healthy dinner, does your nose lock in contempt, remembering those canned peas? Today, a healthy dinner does not need to earn your contempt. As a matter of fact, a healthy dinner can be as tasty and nutritious a meal as you’ve ever enjoyed. Fresh ingredients are the key to a good meal you’ll look forward to eating. To make it easy, start by setting aside a half an hour each week to look over your storage room and think about what you want to eat next week. Plan your dinner menus, making sure to include foods from the “food pyramid” of healthy choices.

This is more common sense than a strenuous exercise in principles of nutrition.

For help visit: www.bread-machine-cookbook.com we all know we need fruits and vegetables, protein, dairy and grains included in our daily meals. Easy enough. Everyone has their favorites in each group, so just choose foods you enjoy.

Although convenient and tasty, most fast food shops do not constitute a healthy dinner. Overloaded with salt, sugar, additives and preservatives, these dinners aren’t going to rate very high on the healthy scale. I hear you. “It tastes good! Healthy means yucky and boring fare!” That’s absolutely a myth.

We all know that cooking is become a lost art in the United States, a truly sad commentary on our society. You’d be surprised to learn that even as a non-cook, if you just choose ingredients you like the taste of and combine them in your own style of savoir faire, you’ll be able to produce a healthy dinner you actually like.

You can cook up a big batch of rice on the weekend to be used throughout the week. Portion the cooked rice into three or four containers sufficient for one meal, suited to your household size. Rice can be frozen and quickly reheated in the microwave. Fresh vegetables may be chopped en masses and frozen for “instant” use another day. Investing a few hours on the weekend preparing ingredients for the coming week lets you throw together attractive healthy dinner recipes on the fly in no time at all.

Quick and Easy Recipe

Dharmendra Kumar asked:

Another day, another dinner to prepare. Are you having a difficult time finding easy to prepare meals that can satisfy your growing family?

You want to give your family the best, but time is in short supply and preparing a healthy meal has become a chore. Too often take out or frozen dinners have to do. Is there a way to combine healthy eating with convenience?

Healthy Family Meals - Better for Children, Easier for You

Yes! Quick and easy recipe, new methods of cooking and easy to prepare staples can change your eating habits and lead to a better eating style for your family. According to the ‘Kid’s Health’ Program created by the Nemours Foundation, family meals are an important part of developing healthy habits in your kids.

Eating as a family will encourage your kids to eat healthy foods like whole grains and vegetables. It will discourage unhealthy snacking and even make them less likely to try smoking, alcohol or marijuana.

But how do you plan healthy family meals on a tight schedule? Here are some ideas to start:

Does your family love lasagna? Maybe you thought that it was a labor intensive dish that just doesn’t fit your lifestyle. Cheesy and full of fat, perhaps it’s not even a wise choice. However, lasagna is actually one of the most versatile meals to prepare - and with instant (no boil) noodles, it doesn’t even have to be a big job.

There are lasagna recipes for vegetarians, low-carb, low-fat and even diabetic diets. Lasagna noodles now come in instant, no-cook preparations that cut time and energy when making this hearty dish.

For lasagna or other pasta dishes, try using whole wheat pasta and shredding carrots or zucchini into the meat sauce for an easy way to up the nutritional value. Using lean ground beef or even substituting with ground turkey or chicken can make for a surprising, yet nourishing result. Buy bottled pasta sauces for even faster preparation - many grocers carry a wide assortment that will add variety to your dishes.

Looking for an elegant chicken dinner? Don’t forget about frozen skinless chicken *******. Baked in the oven with a dollop of salsa and shredded cheddar on top makes for a healthy alternative to frying or heavy sauces.

Need ideas for a side dish? Why are you wasting time cutting and washing lettuce when you can pick up a prepackaged bag at the grocers? Not to say it’s the cheapest method, but it definitely helps busy families put nutrition ahead of convenience when planning a meal.

Have you ever tried steaming vegetables in the microwave? Fresh or frozen veggies make for another easy side dish when they’re popped into the microwave for a few minutes. Add a couple tablespoons of water and cover with a paper towel, an easy AND healthy alternative to frying or boiling.

We’re all concerned about our children eating healthier foods. Regular family meals will encourage kids to develop healthy eating habits - an important key to good health later in life. By making meal time less stressful you can focus on the joys of spending time together instead of the hassles of preparing healthy family meals.

Fast Dinner Recipes

Wednesday, June 18th, 2008
Audra Elizabeth asked:

We all know that we need fast dinner recipes to get dinner on the table quick. Very seldom do any of us have time to make everything from scratch and spend hours in the kitchen. Here are some of my favorite fast dinner recipes to get dinner on the table in a jiffy!

Salisbury Steak

This recipe doesn’t take much prep time, but it does take a bit of time to bake, so plan ahead for that. The sauce has a nice zip to it, thanks to the barbecue sauce and the stuffing mix adds a nice flavor to the patties and helps to make this a quick fix dinner. To make this recipe even faster, substitute dehydrated onion flakes for the chopped onion.

Ingredients:

1 ½ lb ground beef

1 package stuffing mix for chicken

1 ½ cup water, divided

¾ c chopped onion (or 1 tablespoon dehydrated onion flakes)

8 oz fresh mushrooms, sliced

½ c barbecue sauce

Directions:

Preheat oven to 375 degrees.

In a large bowl, mix together then ground beef, stuffing mix, 1 ¼ cup water and the onion. Pat into ½ inch thick oval shaped patties. Put in a large baking dish and bake for 25 minutes.

While patties are baking, spray a skillet with cooking spray and heat over medium-high heat. Sauté mushrooms for 5 minutes, stirring every once in a while. Add remaining water and the barbecue sauce. Turn heat down to low and cook 1-2 minutes or until the sauce is heated.

Serve sauce over patties.

To round out this meal, serve with green beans and potatoes baked in the microwave while the patties are baking.

Zippy Chicken & Pasta

This is a fun and colorful fast dinner recipe that kids and adults love. It’s a great way to get kids to enjoy eating their veggies. This is a complete dinner on its own so it’s especially fast. Since it’s fairly light, dessert would be a good addition to this dinner.

Ingredients:

1 (8 oz) package fusilli or rotini pasta

½ c Italian salad dressing, divided

1 lb boneless, skinless chicken breasts, cut into chunks

2 cups broccoli florets

1 large red pepper, chopped

1 small onion, sliced thin

1 tablespoon chopped fresh parsley (or 1 teaspoon dried)

¼ cup grated parmesan cheese

Directions:

Follow directions on package for cooking pasta.

While pasta is cooking, in a large skillet, heat ¼ cup of the dressing over medium-high heat. Add chicken chunks and cook about 5 minutes or until the chicken is cooked through. Stir occasionally. Add vegetables and parsley to the pan and cook 5 minutes longer.

Drain pasta. Add to chicken mixture and stir well. Add remaining ¼ cup of Italian dressing and toss to coat. Sprinkle with parmesan cheese.

A fun twist on this dinner would be to substitute shrimp for the chicken. If you make this substitution, you should reduce the cooking time to about 2 minutes or just until the shrimp turns pink. Shrimp will turn rubbery if overcooked, so it’s important to watch your cooking time.

Since this fast dinner recipe is a complete meal in one bowl, there really isn’t anything to be added to round out this meal. But since it’s nice and light, a quick dessert would be fabulous. I would suggest a pudding parfait. Just take your favorite flavor of pudding, layer it with cool whip and some graham cracker crumbs in a pretty glass and there you have an easy but fancy looking dessert.

Tips for Hosting a Dinner Party

Friday, May 9th, 2008
gurpreet singh asked:

There is nothing like an evening of good friends and good conversation. If you love to entertain friends and co-workers, but lack the funds for a traditional dinner party, you are in luck. If you shop smart, it doesn’t take a lot of money to throw an event that will make you the envy of your social circle. When all else fails, consider a potluck. Have each one of your guests bring their favorite dish or appetizer. It can be a lot of fun to try new recipes and variations.

First off set the mood! A good dinner party is all about ambiance. Consider going to your local dollar store or discount store to purchase some inexpensive tapers and candles. They are an easy way to brighten up a room, and encourage conversation. Don’t be afraid to try something fun, either. Try a themed party like a Hawaiian theme, or an 80’s theme. The possibilities are endless, and it will help break the ice among your guests. Encourage your guests to dress up, for instant glamour.

Once you have the mood set, it’s time to think about food. Contrary to popular belief, you don’t have to serve a seven course meal. Stick with cheap appetizers and fingers foods. Fondue parties are a blast to throw, and cost very little to pull off. Encourage your guests to bring their favorite dippers, to save you even more. A wine tasting party is also a fun event, and can cost you almost nothing to throw. Ask each guest to bring a bottle of their favorite wine. All you have to do is supply the wine glasses! If you choose to go a more traditional route, try buying your food online. There are many websites that sell discount goodies, and you can save even more by using an e-coupon site. If you go through one of these coupon sites you can purchase lobsters, wine, chocolate, steaks, appetizers, and just about anything else you can think of. It only takes a few minutes to shop, and many vendors offer free shipping. It couldn’t be easier!

Pay special attention to the dinner party invitations. A good invitation will help convey the theme of the party, and instruct the guests on any food or items that they need to bring to the event. You can create cheap, one-of-a-kind invitations, by using supplies available at your local craft supply store. Each invitation shouldn’t cost more a few cents apiece. Don’t forget to address the envelope in your own handwriting; it gives it a personal touch. Good luck!

Buffet Recipes And Tips For The Imperfect Hostess

Thursday, May 8th, 2008
Daniel Millions asked:

Hosting a dinner party for friends? Or have you been selected (or singled out, ahh!) to host Thanksgiving or Christmas dinner this year? How exciting. And what a pain in the rear. While having the people you love in your home and feeding them a ton of food is rewarding and can be a lot of fun, chances are you’re a little stressed about it. Unless, of course, you’re Martha Stewart.

When you’re overwhelmed planning a dinner party, sometimes choosing a few good buffet recipes and setting up a simple buffet seems like the easiest thing. And though it’s true that, in many ways, a buffet is simpler to do than a sit-down dinner (where you have to prepare each guest his or her own plate), hosting a buffet style dinner is no walk in the park. After all (and especially if your family is as piggy as mine), you’ll still have to cook a whole big pile of food, won’t you?

Choosing Buffet Recipes: When choosing recipes for a buffet dinner, the first thing you’ll want to think about is ease of preparation. When having a lot of people over for Thanksgiving or Christmas dinner (or any other holiday celebration), there is always a lot of food involved. Can you easily prepare a particular dish for a large number of people? Do you have room in your oven or on your stove to cook all of your dishes at once?

Another thing to think about when choosing buffet recipes is how much time each dish will take to prepare. When you host a dinner party, there are about 100 things on your to-do list the day of the party or holiday… and about 100 other things that you never even thought of. The best way to cut down on your work load a bit?

Pick recipes that you can make ahead of time. If 80% of the cooking is done in the morning before your dinner party, you can be sure that things will be a lot easier when the guests arrive. Some great dinner party recipes that you can make up ahead of time are:

1. Cold vegetable salads and pasta salads

2. Soups and stews (add any rice or pasta at the last minute)

3. Veggies and dips

4. Cold appetizers

5. Reheat-able sauces

6. Breads, biscuits, etc.

7. Sliced cheese and fruit trays

8. More stuff I can’t think of now

Last, you’ll want to think about how easy a particular dish is to eat. Especially if you’re going to have some guests on their feet or perched on chairs, you’ll want foods that they can eat without too much cutting or hacking. Unless you want them to eat a whole steak in their hands like some kind of carnivorous squirrel (which would be entertaining but unhygienic), skip preparing a large piece of meat.

Buffet Table Setting Tips: Got your buffet recipes figured out? Now it’s time to get the table ready. While it seems like setting up a buffet table should be as simple as tossing things together, there are a few things you can do to make you buffet table both look nicer and be easier to use. One is to vary the height of different dishes.

This makes the table look more appealing visually and makes it easier for guests to access a particular dish. Another important buffet table setting tip is to… avoid being boring! Most people have been to about 1000 buffets in their lifetime, and most of them are ordinary and all the same.

But with some creative decorating ideas and a little flair for the unusual, you can create a beautiful and unforgettable buffet table. Good luck!
