Tandoori Curry in a Hurry part 2

Farf’s “Lazy Tandoori”

Ingredients
1.2 Kgs Meat -Cubed
3 Potatoes -Cubed
2 Carrots -Chopped
1 Jar Tandoori Paste
1 Onion -Diced
1/2 Cup Frozen Corn
1.5 Cups Rice + 3 Cups cold Water
1 tsp Cayenne Pepper
1 TBS Suger
3 TBS Corn Flower
Water
Oil
Salt

Process
Seal the meat with 2 - 3 TBS of Tandoori Paste with the onion and enough oil to Fry.
Once the outside of the meat is cooked, throw in 1 - 2 cups of Water, Potatoes, Carrot, Corn, Sugar, Cayenne Pepper and the rest of the Tandoori Paste.
Boil untill the Potatoes are almost soft enough to your preference, making sure theres enough liquid to prevent the tandoori burning to the bottom. Place on a LOW Heat.

Mix Rice, 2 tsp of Oil and 1 tsp of salt. Add the water then bring to the boil.
Once boiling place the lid on the rice and let it sit on a VERY LOW heat.
After 15 - 20 Mins the rice would have absorbed the remaining moisture and the Potatoes in the Curry should be done.

Mix Corn Flour and enough COLD water to disolve then stir into the Curry untill it thickens.

If its not thick enough, add more Corn Flour and water, If its to thick, just add more water.

If you feeling fancy, serve with a Dollop of Pot Set or Regular Yogurt on-top or on the side.

Quick and Easy Dinner Recipes

Sometimes getting dinner on the table seems like a daunting task, but with a little preplanning, it can be quick and easy and even save you money. These quick and easy dinner recipes make getting dinner on the table faster than ordering take-out!

This first recipe is great for the Mexican food lover. The soup and sour cream combine with the taco sauce and chilies to create a creamy but flavor filled sauce. The chips add a simple but nice contrast. You can control the spiciness of this dish by using either a hot or mild taco sauce.

Chicken n’ Chips

1 can cream of chicken soup

8 ounces sour cream

2 tablespoons taco sauce

1/4 cup chopped green chilies

3 cups cubed chicken

12 slices American cheese slices

4 cups broken tortilla chips

Stir together the soup, sour cream, taco sauce and chopped chilies.

In a shallow 2 qt baking dish layer 1/2 of the chicken, soup mixture, cheese and tortilla chips. Repeat Layers.

Bake uncovered at 350 degrees for 25-30 minutes or until bubbly.

Serve the Chicken n’ Chips with Spanish rice, refried beans and a fresh, crisp salad.

The second recipe is an easy spin on the traditional comfort food of Beef Stroganoff. The aroma of the garlic cooking is fabulous. The flavors meld together very nicely.

Quick and Easy Beef Stroganoff

1 pound beef round steaks - cubed

1 onion chopped

1 4-ounce can mushrooms do not drain

2 teaspoons minced garlic

3 teaspoons beef bouillon

3 cups water

4 cups medium egg noodles

1 cup sour cream

Spray a large pot with cooking spray. Cook beef, onions, mushrooms and garlic over medium high heat. Stir occasionally until meat is cooked through.

Add water, beef bouillon, egg noodles and sour cream to the meat mixture. Turn the heat up to high and bring to a boil.

Once boiling, turn heat down to low (do not cover). Cook on low for 5-7 minutes until pasta is desired doneness, stirring occasionally.

Remove from heat. Let sit 4-5 minutes before serving. Sauce will thicken as it stands.

To round out this meal, serve with fresh rolls that are warmed in the oven and canned or frozen peas.

This third recipe is a stick to your ribs kind of meal. The stuffing gives this recipe a nice change of pace from your tradition meat and potatoes type dinner. This recipe is also very budget friendly.

Hearty Hamburger Casserole

1 pound ground beef

1 19-ounce can chunky vegetable soup

1 6-ounce package instant stuffing mix

1/2 cup shredded Cheddar cheese

Brown beef in a large skillet until no longer pink. Drain any fat and stir in soup. Set aside.

Prepare stuffing mix according to package directions while beef is cooking.

Spray a 2 qt baking dish with cooking spray. Spoon half of the stuffing into baking dish. Layer with beef mixture, cheese and remaining stuffing.

Bake, uncovered, at 350 degrees for 30-35 minutes or until heated through.

This is pretty close to a one-dish meal, but to make it complete, serve with fresh, warmed rolls and a side salad.

These quick and easy dinner recipes should provide some variety to your dinner repertoire and at the same time get dinner on the table fast!

• Experimenting with pizza toppings is always fun

It is always fun to experiment with pizza toppings to create new pizza recipes. Try changing your cheese combinations; who is up for an asiago/fontina blend over beef and broccoli leftovers? Maybe add a little cheddar, brie, or chabichou du poitou to your mozzarella topping to spice things up a bit.

Using leftovers on pizza can be a fun, fast, easy way to enjoy the original meal a second time, not to mention that it will free up room in the fridge. Quick and Easy Dinner Menu and Recipes

In today’s society, it is often hard to find time to get the family together around the table for a home-cooked meal.  Yet the health professionals tell us we Americans need to eat a lot less fast food.  And the psycologists tell us we need to spend more time together as a family around the dinner table.  So what’s a busy family to do?  Make time to eat a home-cooked meal, together as a family, at least three times a week.  Get the children to set the table.  It’s a good learning experience for them, they learn to feel like an important part of the family, it saves mom and dad some time, the family experiences together time, etc.  And remember, this is just a family dinner.  Everything doesn’t have to be perfect.  So what if the placemats and napkins don’t match…let the kids have some fun and feel important.  Make gentle suggestions and never be critical.

Following is an easy menu that can be made quickly, especially when everyone helps out and works together.    And it won’t break the bank with the skyrocketing grocery prices of today. Give it a try this week.

SALISBURY STEAKS WITH ONIONS

1 lb lean ground beef

1 egg

1/4 cup seasoned bread crumbs

1/4 tsp salt, optional

1/4 tsp garlic powder

1/4 tsp fresh ground black pepper

1 tbsp Worcestershire sauce

1 1/2 tbsp butter

1 medium onion, thinly sliced

1 1/2 tbsp flour

1 1/4 cups low-sodium beef broth

1 tsp dried parsley

Preheat broiler.  Line broiler pan with foil and spray with a non-stick cooking spray.  Combine beef, egg, bread crumbs, salt, garlic, pepper and Worcestershire sauce in a large mixing bowl.  Mix well.  Shape into 4 patties.  Place patties on prepared broiler pan and broil, turning once, until no longer pink in the center; approximately 10 minutes.  Meanwhile, melt butter in a large skillet over medium heat.  Seperate onions into rings and add to skillet.  Saute about 4 minutes or until translucent.  Sprinkle in flour and cook, stirring continually, about 2 minutes.  Gradually stir in broth and cook, stirring continually until broth thickens; about 2-3 minutes.  Stir in parsley.  Pour onion gravy over the cooked patties and serve immediately.

Note:  Want to sneak in a vegetable?  Grate a carrot into the beef mixture before forming patties.

Make this 7-layer salad the night before and refrigerate.  When you get home from work, soccer games, music lessons or whatever, your salad is ready and waiting.

7 LAYER SALAD

4 cups bite-sized mixed lettuce pieces

1 cup chopped green bell pepper

1/2 chopped mild or sweet onion

1 box frozen peas

6 hard-boiled eggs, sliced

1 pkg (8 oz) shredded low-fat cheddar cheese

6 slices crisp fried bacon, crumbled

1 pkg Ranch Dressing mix

1 cup mayonnaise

1 cup low-fat plain yogurt

In a clear salad bowl, layer the following ingredients in this order: lettuce, bell pepper, onion, frozen peas and eggs.  In a small mixing bowl, mix together the Ranch Dressing mix, mayonnaise and yogurt.  Add atop the layers in bowl.  Add cheese and bacon.  Cover tightly with a lid or aluminum foil, plastic wrap, etc.  Refrigerate overnight before serving.

ZUCCHINI AND YELLOW SQUASH SAUTE

2 medium zucchini

2 yellow squash

2 tbsp olive oil

1 clove garlic, minced

1 tomato, peeled, seeded and chopped

1 tsp dried oregano

pinch of dried basil

Salt and pepper to taste, optional

Scrub zucchini and yellow squash; cut into 1/4-inch slices.  In a large skillet, heat the olive oil over medium heat.  Add the garlic and cook, stirring, for about 30-45 seconds.  Add the zucchini and yellow squash to skillet.  Cook, stirring occasionally, until tender–about 5-6 minutes.  Stir in the tomato and oregano.  Simmer 1-2 minutes longer.  Add salt and pepper, if desired.

For dessert, here is a quick and easy recipe for parfaits.

CHOCOLATE ORANGE PARFAIT

2 cups fat-free milk

1 pkg sugar-free instant chocolate pudding

1/2 cup nonfat dry milk powder

3/4 tsp grated orange peel + more for topping

1 cup evaporated skim milk

In a large bowl, combine skim milk, pudding mix, nonfat dry milk and 3/4 teaspoon orange peel.  Mix at low speed until just blended, 1 to 2 minutes.  Using a seperate, clean, chilled bowl and chilled beaters, beat evaporated skim milk until soft peaks form.  Fold into thickened pudding mixture. Spoon into dessert glasses and sprinkle with grated orange peel.  Top with sugar-free whipped topping if desired, reserving the topping grated orange peel to go on top of the whipped topping.

Note:  This recipe, without the topping, has 13 g protein and 26 g carbs

Healthy Minestrone Soup Recipe

What sounds more cozy and satisfying on a chilly day, or when the sun fades and it finally cools down in the evening, than a comforting bowl of flavorful soup? In addition to the warmth and comfort soup can offer, it’s also a “secret weapon” for both improved health AND weight loss!

A study was performed in a laboratory in which twenty-four lean women ate breakfast, lunch and dinner under supervision in the lab on one day a week for a total of four weeks. On three of the four days, these women ate one of three different types of “snacks” seventeen minutes before sitting down to the lunch meal. One type of pre-lunch “snack” was a measured portion of chicken and rice casserole. The second type was the same amount of chicken and rice casserole served with a glass of water. The third type was a bowl of chicken and rice soup, which contained the exact same measured amounts of both the casserole and the water that had previously been served separately.

The average amount of calories these women ate at lunch following the pre-lunch snack of soup was significantly lower than on the other days when either just the casserole or the casserole plus a glass of water was ingested prior to the meal. Also, these women did not compensate for the smaller calorie intake at lunch by eating a larger dinner later in the day.

The result of this study suggests that eating soup can help a person to feel full and satisfied while taking in fewer calories. This is just one reason soup is considered to be an essential component of the Tortoise Diet’s “Daily Seven for Success.” Regularly enjoying broth-based soups filled with colorful vegetables and heart-healthy legumes is an easy way to increase the intake of fiber, phytonutrients, vitamins and low-fat protein- all in one satisfying bowl. In addition, eating a hot liquidy concoction, one spoonful at a time, forces a person to slow down the act of eating. This allows the stomach to get the “I’m full” message sooner, so over-eating is less likely.

You’ll find several excellent recipes for delicious, nutrient-dense soups in my book, The Tortoise Diet. The following is just one of the many “How Low Can You Go?” recipes you’ll find located in Appendix C. All of these recipes are intended not only to be nutritious, but to be quick and easy enough for anyone to be able to regularly whip up in their own kitchen. Making this recipe for Minestrone Soup, for example, requires just a few minutes to gather the ingredients, clean and chop the vegetables, open a few cans, and toss everything into a pot.

Once the soup has simmered for an hour or so, you’ll have a week’s worth of individual servings to place into serving-sized containers and pop into the refrigerator or freezer. Throughout the week, it will be a snap to toss one of these containers into a lunch bag, to take with you when you leave the house. The frozen container will help to keep the contents of your lunch bag chilled until you are ready to pop it into the microwave to heat and eat.

So, for your health and for your weight loss … EAT LOTS OF SOUP!

THE TORTOISE DIET RECIPE FOR MINESTRONE SOUP

Place all of the following ingredients into a large stockpot:

1 can fat-free chicken broth plus 32 ounces of water ( may delete the broth and instead use three chicken, vegetable or beef bullion cubes, if desired) 2 cans stewed tomatoes, including liquid 1 can great northern beans, garbanzo beans, or cannellini beans, including liquid 1 can kidney beans, including liquid 2 cans cut green beans, including liquid 1 can (12 ounces) vegetable juice (like V-8) 2 stalks celery, diced 3 carrots, cut into bite sized pieces 1 small onion, diced 1 whole bay leaf 2 cloves garlic, cut into fourths and placed into the broth 1 teaspoon oregano 1½ teaspoons dried thyme 2 dashes Worcestershire sauce ½ teaspoon crushed red pepper flakes Salt and pepper, to taste

Add salt only after the soup has been simmering for 30 minutes or so, after you’ve tasted it, as the liquids already added contain salt.

Simmer for 1 to 2 hours until vegetables are tender.

During the last ½ hour or so of simmering, add 1/4 cup (dry) tiny elbow pasta. During the last 5 minutes of simmering, add 2/3 cup green peas.

Entire recipe = approximately 1,500 calories.

Sprinkle each serving with 2 teaspoons grated Parmesan cheese, if desired (adds 50 calories).

Hamburger Steaks With Brown Gravy Recipes

A hamburger steak is a perfect comfort food, and hardly even requires poring through recipes.  At its most basic, it’s just ground beef, after all, maybe with a little bit of salt and pepper or garlic powder mixed in.  But that makes for a pretty bland meal, doesn’t it?  A hamburger steak with brown gravy recipe, however — now that’s what you need to turn a simple meal into a perfect dinner.

When I make hamburger steaks with brown gravy, my recipe calls for Rawleigh Steak and Hamburger Seasoning Mix, as well as Rawleigh Onion Flakes — they are well worth mail ordering for, as nothing in ordinary grocery stores is comparable.  A pinch of kosher salt, a touch of Worcestershire sauce, and the patties are ready to be cooked; in the winter, you have to resort to frying or broiling, but in summer you definitely want to grill!  

The brown gravy for my hamburger steak, too, must have Rawleigh’s Brown Gravy Mix — no other mix can compare.  You can make it according to the package directions (and isn’t that a great jar, by the way, rather than those packets that spill powder everywhere when you tear them open?): 2/3 cup gravy mix combined with 1 cup cold water, then whisked into 3 cups boiling water until thickened.  But I like to tinker a bit, so here’s how my hamburger steak with brown gravy recipe looks:

2 pounds ground beef

3 tablespoons Rawleigh Steak and Hamburger Seasoning Mix

2 tablespoons Rawleigh Onion Flakes

1/2 teaspoon kosher salt

2 tablespoons Worcestershire sauce

Combine ingredients, divide into 6 patties, and cook to desired doneness.

1 tablespoon butter

8 ounces sliced mushrooms

1/3 cup red wine (one that’s worth drinking!)

2/3 cup cold water

2/3 cup Rawleigh Brown Gravy Mix

3 cups boiling water

Heat butter in a skillet, and add mushrooms; sauté until golden brown.  Meanwhile, combine wine and cold water; stir in gravy mix.  Whisk mixture into boiling water and cook until thickened. Stir mushrooms into brown gravy. Place hamburger steaks onto a serving platter and top with the brown gravy.  Serve hot to a hungry family!

This is easy enough to make for a quick weeknight dinner, but also sophisticated enough to be served at a dinner party.  My hamburger steak with brown gravy recipe is an all-purpose hit!

People are busier today than ever in history. People do more and more, which compensates for the speed modern technology brings to tasks. What suffers is home life. People have less energy to spend around the house. That includes meals. Making dinner recipes easy has become a holy grail. It’s nice to know there are a lot of ideas around for quick meals.

It was all by hand cooking in the old days. Grinding meat into casings was the way to make sausage. When they ate pasta they used home made noodles and home made sauce made from tomatoes and other ingredients. Cooking was an all day affair. With more at home spouses, this was hard but not out of the question. But as people began to realize they wanted more from life than cooking and cleaning every day, more and more pre-packaged and pre-prepared foods began to appear. Cake baking, for example, slowly converted from mixing flour, eggs, vanilla, milk, carefully melted chocolate and many many other ingredients to opening a box and mixing in some eggs and milk. It’s now a simple matter to bake a cake. Far less time is required before a cake can be enjoyed. Change has happened.

There are lots of places to find out how to cook more quickly. The television cooking shows are more popular than ever. Gone are the days of the Galloping Gourmet getting drunk on cooking Sheri while Julia Child droned on about fancy French meals. There’s more focus in today’s shows on cooking for the rest of us. It’s more 20 minute meals and foods that can be prepared in under a half hour. This isn’t just hot dogs or scrambled eggs. The focus is delicious meals that appear to take a lot longer to make than they really do.

Pre-packaged and ready made foods are a lot better than they were, too. Most supermarkets have delis where hot meals are made. It’s a combination of home made and take out. Freeze these meals for eating another time, too. That’s another idea. Use the weekend to cook, then freeze the meals to eat during the week when life is busier. Many foods including lasagna are actually better reheated.

Even today it’s possible to eat well without eating out daily. There are plenty of places to learn about making dinner recipes easy. Bon appetite.
